Parsley is terribly underrated as an herb, health food, and essential ingredient.
 
I want more of it in my life.
 
The best falafel is green inside, lots of parsley... when it's yellow too much chick pea and dense. 
 
:drooling:  That looks sooooo good. I love Indian food.  It is a bit pricey in my neighborhood, but further north of me there's a street full of Indian places (grocery stores, restaurants, clothing, etc.) and everything there is pretty affordable.  I love going there for the buffets... now i'm hungry.

Ive made some variation of your tuscan beans four or five times now. Its become one of my favourite meals of late.

I plan on making it again tomorrow! Its so simple and quick.  Tuscan beans with a green veggie and grains, and black bean burrito bowls are two go to meals here.  Quick, easy, and delicious. 
 
 
On to this morning's brunch....
 
I've cut out eggs from my at home diet, which has been a lot harder than dairy for me.  I used to love egg tacos for breakfast.  Today I finally think I concocted a replacement.  I've been playing with soyrizo tacos, mixing the soyrizo with different veggie friends to get a nice filling taco.  They've all been good but not quite where I wanted it to be.  Most the time I cook up soyrizo and potato( different types of potatos too).  I've tried adding vegan cheese (which i think is weird), and beans at different times. Today though, on a whim I added green peas.  The slight change pushed this taco filler to another level for me. My new go to morning-ish tacos from this day forward will be soyrizo, red potato, onion, and green peas.  It was so good I almost left out the tortilla.  I topped the tacos some salsa, cilantro, and Valentina's muy picante extra hot sauce.

Sweet corn Tamales with a couple of awesome Dee-Roo sauces  :drooling:  :dance:  served with Taco-Rice and black bean tacos, Avocodo dusted with my smoked Serrano pow.
Bonus condiment; homemade pickled Aribibi Gusano peppers
(I think i used a touch too much rice wine vinegar in last years Pickled aribibi gusanos, they are Tart. but they are still plenty hot  :drooling:  #NoLimeNeeded )

Look awesome GIP! I'm not about to be the food police here, but if anyone asks cheese/dairy/eggs qualifies as vegetarian.  People who don't eat anything that comes from animals or use anything that "exploits" animals (like honey or wearing leather) call themselves vegan.  I just like to eat plants.  +1 for Dee-Roo sauces... so good, need to get more ASAP.  
 
HOLY MOLY! The bar down the street from me just started carrying these last night.

They serve a variety of good ole beef burgers, but they also already have a dressed up Beyond burger and deep fried vegan tacos! They are a sports bar too, which you may think ok well that's normal, but I live in a (now) trendy, hipster neighborhood that is anti tv's in bars for whatever reason. My go to dive bar that had TVs and cheap beer was bought out and shortly there after shut down like 4 years ago.  This new place has an outdoor patio with fireplaces and they already love my dogs.... I've found my new home guys. *wipes a tear of joy off cheek*

I went to service one of my accounts at a pizza joint on Capitol Hill.

  • The Hot Italian, topped with peppers, onions and hot mustard
  • The Sweet Italian, with sweet caponata relish and Italian parsley
  • The Bratwurst, served with sauerkraut, caramelized onions and parsley
 
My friend got the inside scoop from Beyond last night (at that bar). They are apparently going for a big push to get the sausages in stores and restaurants around Chicago (sausage capital of the US?), and I am totally ok with that.  I don't usually go outta my way for the vegetarian replacement meals much anymore, but to go to a place(especially a sports bar) and have the option of something veggie that isn't a salad, some fried appetizer, or black bean burger is always nice.  And it's a great alternative to bring to summer BBQs when everything revolves around the grill.
