food The Spicy Meatless Thread... (ya I went there)

I tried some Bobs Redmill TVP recently as a taco meat. Rehydrated it with HerbOx no salt added beef bullion first. Not really any beef in it other than a tiny bit of beef fat.
 
I got to say it was surprisingly good for fake ground meat. So i ordered some Hoosier Hill Farms TVP "burger" and then saw they had chunks too. Bobs is way too pricey. It was about $25 for 5lb total on Amazon. Huge fan of tau pok in Asian curries and TVP is around 50% protein. About 25% after rehydrating.

I will rehydrate the TVP "chicken chunks" in the HerbOx chicken bullion and try it in a white chilli.
 
Their TVP locally is under $4/10oz but that is still high. Made a good fake taco meat though using MrsDash seasoning mix. Texture was so good it could fool you.
 
Going to try a TVP and wheat gluten "burger" idea next. Its like 2 parts TVP to 1 part gluten. Maybe "meatballs". Got a 2lb bag on the way. Should be here Monday. For me im not going actual meatless but my dad wants to try some pretty close. Just using HerbOx as the only meat product and like i said it has very little. Ive had some TVP chicken dishes that were amazingly close to tasting like real chicken. I want to see if i can fool my brother but i will be using a meat stock or bullion to do it.
 
It will interesting to see how well this works out. Might work well for easy camping meals with next to no refrigeration needed. Use as much dehydrated/powered products as possible. No cans and minimal trash to deal with.
 
 
 
putting and AED on this thread... anyone out there still cooking sans the meat?  I still do, just have not had much extra time for posts. I also have not had the want to go all out in the kitchen, i come home drained and cooking takes a figurative back burner.   So I'm looking for some motivation.  What should I cook next week?  A mock meal?  A dish that is traditionally meat free?  Give me your ideas, I go grocery shopping on Monday.  
 
P.S. I am allergic to quinoa so unless you dislike me, none of that.

Beyond Meat Hot Italian links are surprisingly convincing, if you like hot Italian sausage... It's great browned and sliced for rigatoni and sauce, or as a hero with sauce, cheese, and roasted peppers.

Funny that, I just made those tonight with some roasted asparagus and baked potato covered in a cheez sauce and broccoli. They're ok, I like the burgers more.  They are far better than tofurkey, but I have gotten pretty decent at making seitan sausages, adding in walnuts or beans for texture.  I'm going to use the left over 2 sausages later in the week with some arrabiata sauce. 
 
I think this upcoming week I can try to make the Al Pastor tacos, but I will probably use jackfruit because I have a can in my pantry.  I may also switch it up to Al Pastor burrito bowls since I'm still toying with the idea of dropping a weight class for if i compete in pan-ams next month.

I just went to clean my vitamix by putting some soapy water in there and turning it on high.... I walked away to do some dishes.... I didn't put the lid on tight enough.....  :banghead:  :tear:

I used jackfruit, which doesn't absorb liquid like the TVP, so you don't need as much marinade. I also added some smoked powder instead of the cayenne, and extra garlic because why not. I let it sit in the fridge for 5 hours, then threw it in a CI to warm it up, finished it in the broiler. 
It turned out alright, I'd cut the lime juice and do more pineapple instead if I were to do this again.  
 
The rice is incredibly simple, I just take a jar of salsa 2 cups of rice and water (sub broth if you want even more flavor), and put it in the rice cooker.  I don't exactly know how much water, I just fill it to the 2 cups fill line in my rice cooker after the salsa is added. 
 
For the beans, that was an Instant Pot job.  I followed this recipe fairly closely with some seasoning deviations because I'm a rebel https://www.wellplated.com/instant-pot-refried-beans/.  
I saved the bean water from that recipe and I'm going to use it to make soup this weekend.
