The Spicy Meatless Thread... (ya I went there)

I know going into this that this thread is going to get meat bombed... but there's gotta be at least a couple other people on this forum that have herbivore tendencies.  Lately almost everything I have been cooking has been meat-free unless its for the dogs.  I've been toying with recipes and finding ways to get the flavors of dishes that usually have animal muscle as the main feature.  Hopefully some of y'all do the same from time to time and we can swap and share some spicy veggie recipes. I've held off on making this thread for a while because I know the ridicule that will inevitably come, but I guess its better to clog my own thread with my hippy food rather than all the other cooking threads. 
 
So here goes, last night per request I made some arroz congri and tostones.  
 
For the rice and beans, I chop up a green and red bell pepper, 2 onions and about 4-5 cloves of garlic. Cook up that in the pot before adding the rice and beans and sufficient water.  Season it up, and pretty much just leave it on the stove for a while.  I don't have any fresh pods yet so I seasoned my batch up with some smoked naga powder for good measure.  The tostones start by cooking them a bit on each side before pulling them from the pan.

After the tostones are cooked and pulled from the pan you gotta squish em dip em in cold water and throw em back in the pan, for the second round of frying. When you pull them out you can season them with whatever you want, I like to make a garlicky spicy sauce concoction to dip them in.  Also, make yourself a guava-lime rum drink for good measure.

Eventually, after a long long time (especially if you use brown rice), your arroz congri will be ready.

Chkn' fajitas tonight. With bell pepper, onion, jalapeno, mushrooms, and squash. Not sure I personally love the morning star chicken but the rest of the family likes it. And I can drown anything in hot sauce. LMAO

Had to do it up in the kitchen to honor GIP.  I hang out with a lot of Macedonians and they always eat these tiny skinless sausages called cevapcici.  I decided to make them with some plant based "meat".  I chopped up half an onion, a clove of garlic, smoked paprika, GIP's serrano pow pow, and black pepper (these meat imitation things are sometimes preseasons so be mindful of that if you make your own).  I added some baking soda and some flax for texture because they are usually added to ground meat (egg not flax usually), however I have no idea if that is necessary for the texture with plant based meat.
 
I let the mixture sit for a couple hours and marinated some veggies.  I don't have the ability to grill at the moment so I had to broil everything.  I served it with fresh bread, sliced up sugar rush peppers and the hottest ajvar that I can find store bought.

10/10 would do this again. Even my macedonian friends were impressed! 
 
Sweet potato, squash and black bean enchiladas. Filling recipe comes from a vegan cookbook called Thug Kitchen "eat like you give a f*ck" sauce is homemade utilizing fresh produce from the garden. We usually like cheese but decided the dish is plenty delicious without it. I'll be topping mine with fermented jalapeno slices and avacado.

I've fallen in love with this vegan chilli recipe:
I'm making it every week - it's so easy and so very tasty. I made some today! I found that it's plenty spicy enough just with the can of chipotles so I leave out the additional pepper powder. Also, not having any marmite, I substituted miso instead. Turns out great!
 
Not spicy but definitely meatless. Tried the beyond meat sausage pizza from Pizza Hut. This is a game changer. Next time I'm adding jalapeno

Mock pulled pork. Made with lions mane mushrooms. 1/4 cup each onion, garlic and starfish pepper sauteed with the shredded mushrooms. As you see in the picture the mushroom peels apart similar to lobster. This makes for an amazing texture. Tossed with a little bit of barbecue sauce and topped with homemade sauerkraut. Absolutely amazing.
