I blend 2 cups of avocado mayo with 1/2 cup of AC vinegar, 3 tablespoons mustard, and 2 aji amarillos. Mix all of these ingredients together in a large bowl, add S&P to taste, and...voila!
Bro, trust me on this one. Once you go tiger prawns broiled with aji charapita aoli, there is no going back. Prawns aren't the same afterwards, still good, but not quite the same.D3monic said:Id totally pop two benedryl and death grip my epi pen for a plate full of that. So beautiful. Not sure ive had tiger prawn any way other than tempura.

Yeah, you pretty much nailed it, but I use mayo, instead of the oil and egg. I have made it both ways, and it isn't really much better starting with the egg and oil versus mayo.nmlarson said:
Me, too! Do you put any lemon zest in the aioli? I'm thinking an egg, oil, lemon juice, dijon, S&P mayo, buzzed up with an immersion blender, with a minced seeded aji limo, one minced clove of garlic and the zest of one lemon blitzed in at the end. Is that close to what you're doing?
