Lamb wellington with an aji amarillo/horseradish spread, roasted carrots and potatoes, and romaine and red cabbage tossed in a rocoto vinaigrette.

I boned put some lamb loins, then whipped up the spread with fresh aji amarillo and horseradish. I spread it on the meat, then trussed, and seared it, finally rolling it in, and brushing an egg wash over a tasty pie crust...of course baking it for the fully Welly experience

I used to be many moons ago. My current career is significantly more lucrative, with much more flexible hours.
