it's a real simple recipe, all the mexicans at work say it's some the best rice they had. 
 
I saute onion and pepper with a little olive oil or butter. Once soft add 1.5 cups jasmine rice ( jasmine my go to rice)
saute for a few mins stirring almost constantly so dry rice doesn't burn. 
 
then I add 2 cups chicken broth and a cup of salsa (frontera chipotle today)  or some salsa and some chipotle sauce. 
 
Cover and simmer for 20min. 
 
Aldi usually has 5lb bags of jasmine rice for less than $5.

Yeah, D3, I LOVE Jasmine rice, and Basmati rice equally. That recipe with adding the Chipotle is what's been missing from my life. Chipotle peppers in Adobo sauce all pureed up is almost always in my fridge.

Sorry I am late to the party, been a crap week, doing palliative care for my grandma until she passed away, then packing things down. Funeral next Friday.

Beef and Oatmeal Stout Pies
 
Cooking in the slow cooker for the next 4 hours
 
2kg topside beef cut into cubes, covered in flour and browned before adding to the slow cooker
200g diced coppa
700ml home made oatmeal stout
1 litre beef stock
6 brown onions, diced, cooked with a good splash of caramelised balsamic vinegar to finish
1 handful of chopped fresh rosemary
3 tablespoons thyme
a good crack of fresh black pepper
sea salt
6 large carrots cut into chunks
1 cup red wine
