Were those chiles roasted in the DO? Looks like open flame to me, which will be unfair to those using pots only. Just checking.

Rules from SumOfMyBits:

1. Everything cooked has to be performed in the dutch oven. If you are cooking twice (finishing or beginning with a different cooking method) that too shall be performed in the dutch oven. Deep frying, baking, braising; all cooking methods must utilize the DO. If you need to flip the dutch oven's lid over to make a skillet to finish the piece, that works. Authenticity is key. Pretend this is your only piece of cookware, and let the imagination run wild. You may use condiments like hot sauce, salsa, guacamole, etc., that may be prepared on the side, but everything else must be made in the DO. Kudos if you make your own hot sauce in the DO!
 
SumBit's Much Lovin' Dutch Oven
SoFlo Boliche, Stuffed Poblanos and Pineapple Upside-down Cake.

So yesterday Frydad dared me to Triple Dutch for this throwdown today. I figured, if I can OWN the Silly Band, then I can probably OWN the Triple Dutch. The confidence was fueled by copious amounts of beer, and was obviously running high.

A Triple Dutch is a HUGE amount of food... similar to Paulky's TD entries. As I fell asleep last night, I had no idea what the menu was going to be.

This morning... different story. The exact words in my head were, "Go SoFlo."

Done. There is only one word that can describe today's main dish, "Boliche!"
Took an Eye of Round. Yea, that's beef. Seasoned it with some Adobo. Cut a slit in the middle. Jammed it full of Chorizo, from one side to the other.
Once the chorizo was balls deep, I seared it in the CI DO.
Sauteed some onions, jalapenos, and poblanos, also in the CI DO (no rules were broken).
Into this slurry went some diced tomatoes, green olives, capers, olive oil, bay leaves, and oregano.
Cooked that baby for a good 7 hours. But you'll see that later (It's the one on the bottom).

Meanwhile, at the SoFlo batcave...
Cooked up some saffron rice in the CI DO. Yea, had to boil water with charcoal...not easy. (But it is easy for us).
Sauteed some chorizo, jalapeno, fresh tomato, olives, capers.
Mixed the rice with the sauteed awesomeness and stuffed it into some poblanos. Baked those pretty little thangs in the CI DO on level 2 until they were done.

Now the cherry on top...The Upside Down Cake Of Glory (hole)
Butter and Brown Sugar. Pineapple. Cherries.
Busted out some secretized soflo cake man-batter. Poured it on top.
Baked that honker under the coals on level 3.
Flipped her over and served her hot...(and blue and righteous)...topped with powdered sugar and hab pow blend.
The pics tell the story better than words ever could. The food was so good frydad cried like a little bitch.

The snow makes a nice backdrop, but it has nothing on the banana leaf.

One exudes frigidity and flu-like symptoms.
The other...Steel Drums, Sunshine, Rum Drinks, and...well, bananas.

Let's see what you got on the triple stack.
I only see two cookers there.
You are only 66.66% as awesome as Sum. (Though I have to give you props for the scruncies)

Salsalady's Triple-Dutch Enchiladas And More-


It was a gorgeous sunny day here in the valley, perfect day to GetItOn! Dutch Oven style. Today's Menu is-

Chicken Enchiladas- DO cooked chicken breasts; creamy sauce with habanero, broth, cream cheese, onion, garlic cooked in the DO; rolled with chicken, Spanish Rice, beans and cheese; baked in the DO to ooey, gooey creamy goodness!

Spanish Rice- rice cooked in the DO with broth, tomatoes, seasoning, habanero

Peach Cobbler- home canned peaches from our tree, cake mix, jello, butter, baked in the DO

Sides of fresh black bean and corn salsa(with jalapeno, habanero, garlic, cilantro) and fresh guacamole.

First order of business was to get some hot coals. The ground was covered with snow, and even after shoveling it down to frozen grass, it got soggy after the fire got going. So out came the Big Block of Wood. (TB, remember this "cutting board"? heehee) It's an end cut from a big glue-lam beam, perfect for a cooking station. We used the campfire to get the coals going and then transferred them to the big block. As it was a glue-lam board, we put the foil down to prevent anything from getting onto the CI pots. It worked like a charm!

Here are the first 2 pots. On the right is the Spanish Rice, and on the left is the chicken breasts simmering in broth, onions, habs and spices. Campfire in the back right.

After the rice and chicken breasts were cooked, we took the chicken out of the pot and added cream cheese, and a little flour to the CI, more coals under the pot and simmered it to thicken the cream sauce. When the sauce was ready, a little bit was added to the shredded chicken that was used in the enchiladas and the rest poured over the enchiladas in the DO.

Chicken, beans, rice and cheese....MMmmmmm......

Shadows were getting long by the time we finished up, but the results were terrific. Well worth the effort by everyone! Thanks for another great TD!

I would like to humbly apologize in front of all of my peers for accusing you of only having 2 CI DOs. You do, in fact have 3. You are hereby 100% as awesome as sum from that standpoint.

The voters can decide the rest.
 
Holy mother of God. You guys are unbelievable! I didn't even think of a scrunchy! I may need to use some of my super powers to fly in and steal some of that grubbage!

FryDaddy, no apologies necessary, amigo. I thought of that when looking at the pics. Great entries as always. Wheebz's chioppino, TB's got it rockin', a SoFlo triple stack of CI......it's a great weekend!

I told myself I was NOT going to TD this weekend. But while I was at the store tonight, started tossing some things into the basket that might feasibly go into a DO. MIGHT.

It was really beautiful today with the sun today, enough to head out in shorts and a tanktop. Kid had the shorts, I had the tanktop~~~ Yesterday, we were working in freezing rain, slopping around in the mud.


notice the DeWalt reciprocating saw on the wood in the sled.....(needed some wood, sent the Kid out to get it...job done in no time.) Love a sawz-all.
