favorite What's your favorite Louisiana-Style hot sauce?

I just remembered something else about the Insanity sauce. Back in the 90's, they used to make my wife sign a waiver to buy it for me. Times change.

I took this advice and bought some pure evil drops. I got the 1.5Million but I need to explore the other, more intense, offerings as well.

I started with a dozen drops but wanted more heat so I settled at 20 drops in a new bottle of Crystal and so far it’s lovely-a good burn with that same table sauce taste and vibe. Im loving it!

It's not that hot......Trust Me!

Just have the 911 operator on standby when you try it..just saying.... and have someone who can translate deep wheezy sounds to English...

Funny thing, today on the jobsite, the contractor and my employee were talking to a new contractor's employee about the time the contractor, my employee and another carpenter were peer pressured into trying Pure Evil drops on a chip. Probably 8 years ago, and they still remember it! No sugar, no milk, just randomly happened after lunch. Nothing but a small, slightly shriveled up apple to help my employee, and he is definitely not a chilehead. Hey, they got a t-shirt out of it.


Hmmmm, might have to bring a little heat to the job monday.... :hell:

27 years ago I had quite the Tabasco problem, I'm talking 3 big boys a week, if mashed potatoes were on the table they were "dyed" pink on my plate. It went on everything, every day. It's truly the sauce that started me down this path long ago saying "I'd love to try and make hot sauce", therefore it gets the nod as my favorite hot sauce ever, I just have to respect it. My tastes and desires changed over the years as the craft movement got it's legs, but of the 35 or so bottles in the pantry at a given time, I guarantee you there's a bottle of Tabasco in there at all times still to this day.
 
Crystal is my go to for that style. I think of it more as seasoning than hot sauce though, flavour acid\salt with a tinge of heat.
It is so clean tasting too, most of the other ones in this category have this lingering rotten pepper aftertaste to me.

The only problem is , it is hit or miss on finding it up here in Canada. When I do I buy lots. I found it at this little hole in the wall butcher shop a city over from where I live for $1.50 a bottle and took 10 bottles home with me. I have hooked quite a few friends and family on it though, I give away bottles like candy when I am really stocked up.
 
Wow, so many Crystal fans here. Too runny for me.

I dont feel like tobasco belongs in the category - every other loisiana style sauce seems almost identical to eachother ingredient/salt wise, but tobasco uses a completely different species of pepper and way less salt... not apples to apples to include it with the rest imo.

For me - Franks all day - its the thickest so sticks to wings better and thats my favorite use of the style...

@ouroboros Fresno Louisiana Style is worth a mention here! I smothered some cheddar bay biscuits in it the other day 🤤
