Thanks, julian slicer... another kitchen gadget I really need around here. 
 
Going to let it go for a bit longer to get some bark on it then wrapping in foil with a little apple juice and butter until temp... butter sounds good in my fat head. 
 
 
Turned out pretty damn tasty. 
 
Took it to 180 and wrapped in foil

Pulled from smoker at 205. Let sit for 20min then gave it a little taste test. Just pulled a little corner off. No bbq sauce for taste test... not sure I want to put it on. I may just leave that up to the guests.

Think I will just heat it up in the smoker tomorrow with the other food. I'd hate to give it the crock pot treatment. 
 
I really love this cornbread recipe. I doubled it for the loaf pan. 
 
  • 1 cup milk
  • 1/4 cup butter
  • 1 large egg
  • 1 1/4 cups yellow cornmeal
  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2-3 jalapenos sliced thin (I used a few bolsa de dulce as well)
  1. Heat oven to 400f
  2. grease bottom and sides of round pan 9x1.5 (I like using ramakens or in this case a loaf pan)
  3. beat milk, butter and egg in a large bowl with wire wisk
  4. stir in remaining ingredients all at once just until flour is moistened (batter will be lump)
  5. pour into pan
  6. bake 20-25 mins (longer if in a deeper pan)
  7. serve warm
