  • What's the best wood to use (other than pimento cos i cant get that here) when smoking jerk chicken? This Aussie jerk really wants to smoke some Jamaican jerk chicken.

    Found custard apples, lychees and passion fruit in the produce section at work today. I have a feeling I may actually start eating healthy!

    Brisket will be done once I learn how to control temps a little better. Probably just be half brisket tho as I don't need a full one for just me and the better half.

    Note to self-when you receive a spice shaker full of chocolate 7 pot lava flakes from pepperlover, it's a good idea not to take a huge sniff of the bottle. Cannot stop sneezing! Smells outstanding though!

    Surprisingly no. To be honest, the flakes don't even smell like they'd be hot at all. Very mild and smoky aroma. It's only a little after taking a deep sniff that the effects hit, and feels more like allergies than face melting pepper heat causing it.

    One gloved hand definitely isn't enough while halving peppers for the dehydrator. No matter how careful you are with the ungloved hand, you still end up burning in places that you shouldn't burn.

    I roll with my knife hand ungloved, too. I get the feeling it's not that uncommon among guys who work(ed) in the food industry. That said, my other hand gets some pretty nasty burns even though I got with a latex glove underneath a heavy rubber one. Freaking Morugas, man.

    I use the black ones from Napa,they work great.
    I also double glove,I strip one pair after handing pods and then ditch the last pair after cleaning up.
    No issues at all with getting exposed in places I dont need.
    Freezer full of peppers and still picking peppers. Thinking my days off on Wednesday and Thursday will be filled with sauce experimentation and grinding powder for seasoning mixes.
    Just found 2 new peppers for me to try in the produce section at work. Padron and shishito. About time I found some I haven't tried in a local grocery store.

    Shishito are good as a stir fry, or you can fry them up as tempura. Could also skewer them and toss them on the grill.

    In general they are a mild pepper, but once in awhile you come across one that packs some heat. It's kind of like playing roulette ;-)
    So Popeye's has a new beer can chicken, that doesn't involve any beer, grills or smokers. So it's just regular fried chicken then?

    Decisions decisions. Trying to keep my grow list to a manageable level for next season. Have space for 1 brown superhot, as I love them in a smoked powder. Trying to decide between OW'ing a chocolate scorpion from this year, or start seeds for the brown moruga I got as a bonus from a pepperlover order.

    Cheers guys! Was initially bummed when I didn't get the position I applied for (meat cutter). But loving it as 1-I'm learning something new, and 2-I'd been wanting to learn how to smoke ribs, brisket, chicken etc, and not only am I doing that, I'm getting paid for it! Sweet!
    Found a baby water mocassin, and raccoon tracks in my backyard this afternoon. Looks like my .22 will be seeing some usage!

    I have found 2 in my yard this year.1 baby Water Mocassin and a big one that I could smell,but could not find.Then one day there it was at the front door.22 are great for those type of problems.
