SumBits- I knew that would confuse some folks, glad you noticed the scrunchie! That was for you SoFlo dudes ....since I'm usually re-wining... :lol:

But it's the tribute to Mr.Bill and the Carlton Hotdog. It's our country-town hometown hotdog.

If you come to the Methow, this is the only 'dog to get.

edit- the name of the the valley is "Methow" which is pronounced "MET-how" (not METH-ouw). Just a fyi- :)

First I was out, then in, then out again. I think I'm over my drive lag. I'm in again. Went to the Frisco hippy joint and picked up some very nice all beef doggage. I'll be bringin' texas dogs from texas for the first time y'all!

Lunchbox's TEXAS TUBE-STEAK; "The Azle Ass-Rippah".

I was thiking of a way to combine some Texas staples - peppers, hot dogs, and grillin'. So I decided to marry a little Tex-Mex, with a little German...and twist it all with a little back-yard, down home, Texas cookin'. So, I'm proud to present my stuffed habi-dogs, with fajita style fixins.

The ingredients:

Dice the habaneros, jalapenos and garlic up finely into a small cup.
Chop up the grilled salsa mix, and place in a separate bowl.

Time to core some hot dogs. Take a smallish diameter drinking straw, place thumb over the end, and press into the dog. Push all the way through until it comes out the other side. Take a bamboo skewer, and push out the hot dog plug from the straw. Then take the straw, and leave the end facing you open...and start stabbing the finely diced goodies. They will start to fill the straw up with spicy goodness. Stick the straw back into the cored dog, and the blunt end of the skewer in the straw, and push out the pepper mix as you remove the straw. Right before the straw exits the dog, pinch the end of it as you remove it to squeeze out any remaining pepper mix.

Toss it all on the grill. Let's get those "fixins" going...

Time to check on the stuffed dogs...

Add a little Shiner Blonde to the "fixins"...

Then toss on the tomatoes at the very end...heat for a minute or two, then turn off the burner as not to mushify the "maters".

All done...add a little fresh grated pepper-jack, and a fine sprinkling of chile-lime powder...and it's time for dinner:

LB, you definately stepped up to the plate. Beautiful idea for stuffin the dogs. Hope you score with both a healty youngin and a TD Crown, in that order.
 
Damn LB. That's some serious grubbage. Some GREAT method...And some DAMN good pics!

I'll be shaking whilst purchasing my TD ingreeds tomorrow.

Hmm i hope its ok, every home hotdog I ever had was with a sausage + it is part of my story.

Coon is Aussies oldest brand of cheese.

I save my proof of life for the serve up :)
 
just to be clear,
I borrowed the hotdog cooker from close of biz on Friday to Open of biz on Sat. How cool is that? Has 7-11 ever done that?!?!???

That hotdog cooker is a piece of Carlton (and beyond's) history and I was honored to be be able to use it to make dinner for us 3 on Friday night.


Our local general store lets folks run a tab, and if you are short a couple bucks, they'll cover it until the next time you come into the store. THAT is the true spirit of people who live in a community.

Don't matter what country, what the size of the community, the spirit is the same.

so I was actually gonna do this today in my tiny kitchen at my hotel, but every single store is closed on sundays so now I cant
 
You failed at finding the Bäckerei that also includes a tiny general store - open on Sunday mornings. Bakeries are always open Sunday mornings. What do you expect Germans to do - eat day old bread?

Also, you could easily find a Gasthaus to sell you some meat/buns/ingredients.
