Congrats in the vacay! I've got the next couple of days off at least. Just cracked a saison style braggot I brewed mid summer. 65% of the fermentables came from orange blossom honey, the remainder came from an assortment of malted grains. I added some fresh aji limo at the end of the boil, then fresh aji limo amd rocoto for the secondary. The WLP 565 yeast really did some great work on this one. I've been popping a bottle a month to check the flavor progression. Every time I drink it, it gets better.
