In my experience the places who do that will have an option for a sweet bbq sauce made with like apricot, raisin, cinnamon, and brown sugar ... like a Maillard chutney ...

I'm sipping on this delicious HB porter, while compiling my shopping list of grain and hops I'm going to pick up at the home brew shop tomrrow. I'm definitely brewing a Berliner-Weiss and a NEIPA, but I might also brew an all brett graf as well, since I have an extra 6 gallon carboy laying around I don't use much.
Never liked a scotch ale myself...
