BREAKFAST!!!

I was looking for a breakfast thread and never found one that seemed open-ended enough to post on. So here y'all go!
 
Posty up your breakfast if you like, even if it's cold leftover pizza.

Forgot to take a picture until halfway through the meal? Perfect! Selfie photo-op.
 
Whoops! You made brunch instead? That's cool... it counts.
 
 
I'll go first with a take on a Cuban breakfast called Huevos Habaneros. It means Havana Eggs, but it's not made with Habaneros. In fact, it's not traditionally spicy hot. (Cuban meals typically aren't.) So, I had to SoFlo it up a bit and call it something different.

These are eggs baked over sofrito with butter on top in a custard cup for about 12 minutes at 375 F (yolks are still a bit runny). Then topped with more sofrito and garnished with some cayenne powder, but sofrito isn't spicy hot either. So...
 
Sofrito Caliente
 
(Enough for one serving)
 
1/4 cup chopped onion
1 Fresno pepper (cored and chopped)
1 green jalapeno (cored and chopped)
1 clove garlic, minced
1/4 tsp ground cumin
1/4 cup peeled, cored, chopped tomato
olive oil for sauteing
 
Saute the onion and peppers till the onion is translucent. Then add the garlic and cumin for a minute more. Then toss in the tomato for another minute or two. Salt and black pepper to taste.

Can't stand it. Get dried garlic chips off my bagel! Blech!
 
I settled back to sesame after years of ET worship ...

The corn meal + sesame is heaven for me, w/ muenster and butter and salted fresh mater ...

I love the salt bagel. I love the onion bagel. I love the plain. I sometimes get poppy. And I like pumpernickel for certain things. Whole wheat is good too. But the everything... and that garlic... nope.
 
I can't really do garlic with breakfast. And those dehydrated garlic chips... no thanks.

Hahaha. Not really a fan. I don't hate sesame, just the toasted flavor on certain things.
 
Try pumpernickel toasted with mustard and swiss, and ham if you wish. That's hella good!
 
Do you do that? I live on that stuff... toasted pump with swiss and mustard. It's my go-to when I want a quick bite in the late am.

I eat two kinds of bagels these days, sesame and pumpernickel ...
 
Sesame when they are mine, and when I run out (which is always before Danielle), then I get pumpernickel ... lol!
 
Danielle eats cheddars, so when I'm using cheddar it usually means I've run out ... the maple bacon cheddar is an exception, though, that was all me (Danielle won't entertain sweet in savory) ...
 
I like gruyere, then muenster, then swiss ... and I use mozzarella where applicable ...
 
I don't like American, except for grilled cheese ... or maybe on the occasional broccoli florette ...
