I've hear some folks around here moan when I've used oregano in my Italian, but I find it "Italian" ...
 
They differentiate it as Greek around here, I think ... or something ...

I lump oregano in with italian as well. I couldn't imagine not using it 
 
I can only speak from what I was taught. No oregano in "pasta" sauce, but it is in pizza sauce. We use a lot of garlic, basil and parsley, but use very little oregano. So many different styles of Italian cooking, I just go with what you like. I am sure you could ask 3 different Italians and get 3 different answers.

similar to what I know, except that often   instead of  oregano, I actually use marjoram..  Technically marjoram is a species of oregano but it has a different taste than regular oregano.  
 
Feeling a little snacky because we ate so early. Made some guacamole to munch on and so we have some for carnitas tomorrow. ... still haven't decided if going into crock pot or oven. 
 
1 fresno, 1 orange hab, half an onion, juice of a lime, handful of soap weed, garlic , seasalt, ground pequin and a little bit of cumin
 

 
 
Pork loin in the oven since i'm out of wood for the smoker.
 
Rubbed it down with Cumin, garlic, pequins, super hot powder, chili powder, onion powder, mexi oregano and sea salt.
 

 
Drowned it in some enchilada sauce and soap weed for some color
 

 
Oh yea, remembered I had a can of roasted green chilies. Used half the can now and the other half when I add onions and stuff.

LOL. Yup it's a stromboli. Not all are roulade shapes, some are just like that.
 
+1 on the poblanos. I don't even use green pepper anymore. Any recipie we make that uses green pepper we have been using poblanos. I'm planning on six plants but you have me wondering if that will be enough now. Do they produce similar to a green pepper plant? I just potted up a bunch of poblano seedlings last night. I still have more I could pot up before I throw the plugs out.
