Much obliged on the avatar. That pic is 4 years old and I'm still trying to sell that guitar. I never bonded with it but dadgum if it ain't 'purty as all get out! Far as the French 'thang...butter, cream, wine, cigarettes and a bad attitude get's you there. Might as well be wearin' a skirt.

I'd say that most classic cooking can find a root in French cooking.....even if they didn't originate there!

I was thinking something similar. Like, must be a trinity or roux base, and must have cayenne. Of course other peppers too, and the dish would be up to you. Something like that.
