Make your best taco.

And it doesn't have to be mexican.

I put ever dang 'thang on a flour or corn tortilla.

Thats a taco.

Make a bigger taco.

Thats a burrito.

Its all good.

Ever had a brisket and egg breakfast taco?

How about a sun dried tomato, goat cheese, roasted garlic, pequin, and refried bean taco?

The rules are this.

Keep it flour or corn.

Home made or store bought.

If you post a pita taco I will like you but then unlike you.

And then probably still like you again if it looks really good.

Get crazy.

Lime cilantro chicken thighs with pequin powder.

I love pequins.

Flat topped.

Like a naval aircraft carrier.

Roll it all up with some cheese and rock it!

The pics do no justice.

Throw 'em down.

In sriracha mayo.

Some restaurants like Bonefish Grill do that.

They call it Bang Bang Shrimp.

Lots of copy cats.

Hmmmph.

I love to be loving shrimp tacos.

Texas wild shrimp are the bestest!!!

Nothing wrong with farm raised Texas shrimp.

They're pretty good.

But they just don't have that killer shrimpy flavor.

I crave it.

On another note.

My dear sweet ma is cooking a turkey.

And a ham for Christmas.

Thats for the family.

I'll be bringing over about 6 pounds of cooked shrimp.

Ma and me will probably only eat shrimp.

Some queso and chips.

And maybe a sweet potato.

Love your family.

But if you can't.

Love the one you're with.

Holy chicken in a wheel chair.

I want that kitchen!!!!!

I gutted the kitchen when we moved here and I mean down to bare cement - no plumbing, no electricity, no tiles, no floor, not a damned thing.

Then my wife and I built it from scratch. All things being relative, I hate it because it is a tiny fucking city-apartment kitchen. Can't wait to retire and move out to the country where I can have a kitchen the size of our entire apartment!

Is that the flex induction cooktop? That is the one feature that might finally win me over to induction as my main cooktop.

I'm not a fan of those cook tops.

Or the glass/ceramic cooktops.

My first choice is gas.

Sadly I currently have electric.

But that kitchen.

The layout and well thought out use of limited space!

Chingon as hell!

No, that's a 4 year old induction cooktop. I might buy the flex after the new year.

My first choice would be gas as well due to the awesome level of heat control, but we can't because our kitchen doesn't have proper ventilation (the hood only recirculates through an activated charcoal filter). Induction is actually much faster than gas, though - you can boil a pot of water in less than 2 minutes. And the risk of grease fires is very low compared to gas.

We did a lot of drawing and planning while building the kitchen. I especially like those metal shelves from Ikea - I don't even have to let the pans cool down before stashing them on the shelf :-) And storing the utensils hanging on the wall hooks saved us two entire drawers of piss-you-off tangled up utensils.
