food Mmmmmm...poppers!

If I recollect this was one of the first threads I started on THP.

Y'all got me thinkin' about a popper casserole now.

I ate them all before I saw this post, but I'll have some more cooked up special for me this weekend and post a pic.  I'd never think of putting raw meat in the pepper before cooking, mainly because of the grease.  I like a little grease, but not a whole pepper full of it.
 
My 'LW' cooks the sausage first and mixes it with cream cheese prior to stuffing the jalepenos, then places in shallow tray with a little water and steams for about 15-20 minutes until tender.  Sometimes she melts some mozzarella (or cheddar) on top during the last 5 minutes.  Photo to follow in a few days...

Grocery store bought Jalepenos halved and cleaned for demonstration purposes (only one out of the whole bunch had any kick to it and even that was poor .... tasted like regular bells)

 
Jimmy Dean sausage (other brands are good too) cooked

 
 
Cream cheese added to the sausage

 
Ready for the oven 20-25 minutes @ 350F ... put about 1/4 inch of water in the dish to steam the peppers.

 
Add some mozzarella cheese at some point during the cooking process .... Done!

 
Ready to eat ... (wish the peppers themselves were good, but the were really awful for Jalepenos)
 
Alright Alright, I dig it. Sausage instead of bacon! 
 
Looks good, I'm with you on the cream cheese. It tastes so good with the 'penos. 
Try the bacon wrapped method some time, it's great!
 
Hmmmm..... that sounds really great, leaving the sausage and cream cheese, but broiled instead of steamed with a bacon wrap.  Cheddar top instead of Mozzarella.  I hope I can score some better quality jalapeños next weekend - these were the worst ever.

You're common variety store bought jalapeno's are usually of Mexican origin.
 
Exported to the you essay for gringos and gabacho's they are of the Jalapeno TAM variety mostly.
 
Almost heatless, and developed at Texas A&M.
 
These are also heavily used in commercially sold to restaurants and bars, pre-breaded poppers.
 
If you want real deal Mexican for Mexican's jalapeno's, find a Mexican grocery store or Mercado.
 
They usually have the normal jalapeno's.
 
One I go to is down in Plano, TX called Fiesta Mart.

Yeah, I used to stop at the Mexican market on my way home ... they always had at least red and green penos, and usually fresh serrano and hab's too ...
 
I was gonna' do up a popper casserole but my daughter is coming to visit this week.
 
Then we're off to Austin to see my ma and her grandma' but here me now 'bleed me later...

Here is some atomic buffalo turds I made. Previously only made them with jalapeños and habaneros. Looking forward to trying this with some reapers
