I was kidding, it was perfectly mid rare and it made its way to some flour tortillas hahahha - Trying to decide what to do with the leftovers.
 
Well, I saw the quesadilla that inspired my quesadilla cook, and you are going to have to cook another, even better unless you want to accept that the student became the master ... on the 1st try, no less. It's like I hole in one'd on yo ass.

The heat is reason enough, but the gusty wind and high humidity during the afternoon/evening thunderstorms is kind of BS for smoking, and frankly, the mosquitos are insufferable beyond the time required for tending to the pepper plants ...
 
I'm going to drag that damn vacmaster our and quick pickle and quick marinade sliced meats for Asian stuffs, and do some indoor yakitori on the propane grill thingy.

Copper River wild caught salmon grilled and served with green beans, last minute glaze of my left over Thai garlic ginger sauce.

JHP, are heavy duty hinges like that available from the home improvement centers like Home Depot? Or, do I need to order online? My Weber kettle should have one, I think.

This is where I ordered mine from based on tons of reviews. I do not think you can just pick one up since they are custom made and not just flat/flush hinges.
