Once wrapped dip both sides into seasoning mix

1Tbs Garlic Powder
1 tsp season salt
1tsp basil
1 tsp oregano

They had preset tests like iron, hardness and such and then had other soooo, I listed Alkalinity, Calcium, Magnesium, sodium and sulfate. Probably are a few others I should have asked for and I'll really be surprised if I get exactly what I'm looking for but hey, it's free.
 
Well, the wife and I celebrate 23 years together on the 8th and we're going out of town for the weekend

So that means Chili making starts today!

RocketMan Chili
(Part 1)

This is 3.54 pounds of Brisket.

He's going into the smokers for 4 hours on Apple Wood this morning at 7:00. So he has to get dressed up and ready. Today he's wearing a generous costing of

RocketMans Dry Rub
1/2 cup Paprika
1/4 cup Kosher Salt
1/4 cup Brown Sugar
2 Tbs. Mustard Powder
1/4 cup Chili Powder
1/4 cup Cumin
2 Tbs, Black Pepper
1/4 cup Garlic Powder
2 Tbs. Cayenne Pepper Powder
1/4 cup Coffee Grounds

Give it a good coating and allow about 30 minutes to sit before putting it in.

In Texas Chili it's all about the meat and there's plenty more to come. I face this recipe calls for about 11 pounds of meat Stay tuned
