outside: canned Hatch enchilada sauce with shallots and kicked up with chipotle pressure cooked in InstantPot (so everything melds and the shallots break down). a little extra CJ... bake...
when done: more warm sauce all over the top
InstantPot Spanish rice (leave the sauce residue in it), beans, salad
