grilling Some BBQ & Grillin' Escapades

How much longer does the meat have HTH?
 
Should you start setting a timer-of-reminder??????!!!!!
 
Seems to me that the minutes fly by faster toward the end of the day!!!!  :D
 
Yep we are at the point in the day where time is moving fast.
 
I was shooting to pull it off the smoker at like 7-730, but really I'm going to pull it when it hits 190F. And then I guess wrap in foil and rest for some time? I dunno really...
 
I've done good today though... being up since 7am on my day off, I have only managed to have maybe 4 beers stretched out over the day. I'm now going to start picking up the pace.
 
Now is about the time I usually start to say:  "What???  Its been on for 13 hours, how can it NOT be done???"  What temp ya got now HTH?
 
I am doing a little bit of smoking myself.  Hope HTH doesn't mind me posting here.  I figure it will give you something to look at while we wait for his.  Also to come are shrimp skewers, and of course hot dogs!

I rubbed the ribs with HBD's Cajun seasoning and FatKidSauces BBQ Goodness.  The wings were marinated in a mix of High River's Tears of the Sun, and Porcus Infernum (bacon sauce) by Voodoo Sauces.  Both were smoked over Mesquite.  The dogs are Nathans, the NY Strips were marinated in Fataliiyaki sauce.  The shrimp were sprinkled with that same BBQ Goodness then brushed with my Fatalii BBQ sauce.

Ribs are sauced and wrapped.  They should be done in a couple hours.
 
Nice grillin JT! Can't wait to see them ribs, and nope don't mind a bit if you post in here, I encourage it.
 
I was in no condition to be posting pics up in here last night! Too many beers, too many happy confections.
 
 
 
Ok, so that brisket took way way longer than I wanted. It must have been because my temps were all over the place. At 12 hours in the smoker  I was still only at 165F degrees and was too shitfaced to keep tending the smoker so I pulled the brisket off and stuck it in the oven until it reached 180 degrees, and at this time it was 10pm, so I wrapped rested it for about an hour and cut it up. Finally was able to feed our drunk asses at 11pm.
 
It was a little chewy, definitely not as tender as one would like, but it didn't matter, it was delicious! Sooo freaking good. The knife cut right through it like it was nothing. Also I got a nice bark, which I didn't think was going to happen!
 
I'd say I was about 85% successful first go at a brisket.

I can't say I'll be doing another brisket any time soon. That is a lot of freaking work.
 
 
Well there you have it. Hey, at least I remembered and took clear pictures. It almost didn't even happen.
 
 
 
 
Looks like it turned out just fine!  I knew it was going to take way longer than you thought.  The last time I did one that way it took me over 13 hrs.  We had a little fun at your expense about you passing out drunk last night hope you enjoy it. :lol:
 
Ha, I saw that. And it was funny because it was mostly true. The outside was trashed. I just passed out with out cleaning up the grill, or putting it away. SInk full of dishes, trashed kitchen. Good times.
 
If I decide to do a brisket again I will definitely allow more time, I under estimated the time by a few hours.

Did you make yourself some bbq sauce?  I love a nice horseradish bbq sauce with brisket sandwiches!  Mmmmmmm

HTH, that is a Food Felony to put store bought sauce on that Brisket you lovingly labored over. LOL
Let me back that up by saying that Brisket looks fantastic. You sure that was your first attempt?
And your poppers look absolutely perfectly done. Was there a little crunch? mmmmm
 
Jay, you feeding an army? I love it when there is that much food cooking outdoors! Did you have a get together?
I want a dozen of them wings.
