Yes it's a great smoke, pink all the way through, they cut nice with hard edges, no falling apart. I don't do the mop/sauce/glaze thing (a lot) but these are perfect for that style.
It's one of the better smokes I've done. Using a water pan, and the snake method for the charcoal I was able to maintain a pretty consistent temp w some babysitting

It's one of those tastes I can taste just thinking about it and it's been forever. And something about squeeze bottle BBQ sauce and hot sauce, with that bread, dry texture ribs, pulled pork, beans, and slaw... mmmmm yeah.

Smoked some salmon, and pork tenderloin yesterday. My goodness the pork was fork tender
And my girlfriend doesn't eat pork, so the glorious salmon was all hers
