Personally, with one like that I would pull it no later than 125F and let it rest for about fifteen minutes.

Then 125F is what you want.

Scovie Fail.

It was the best Roast Beast I've ever had, and not one decent picture to prove it.
We still have about 1/2 of it for left overs to make more good stuff with.
It was a little over done, but still, fork tender and deliscious.

No PMD product were used in the making of this meal.

Aspergrass with Salt and Pepper
Twice Baked Red Potatatos whipped with Pepper Jack cheese, Blue Cheese, Green onion, Jalapenos, Bacon Bits, S Cream.
Primed Ribbss with Salt and Pepper. No plated pics, just remembered half way thru Cavemanning this s**t.

Everything about that PR and tater and asparagus meal is spot on for muah ...

D passed out early from all the wine and champagne we had at a dinner ... so I stayed up to hack through the night a little bit and enjoy my buzzzz ...

I don't have to tell you what happened ...

I gotta say, that redneck rotisserie put one hell of a nice crust on it. Prolly even better than my BBQ's roto...
It was about 125°, but still probably the best prime rib I've ever had.

Loving that plate full of sin you got there GM. and, people Dremel SOBER? who knew? :rofl:
 
Two glasses of wine, egg nog with bourbon, and a Grey Goose with lemonaid mix and ginger ale....... cooking has commenced! LOL
