Lean Kosher beef shoulder and brown ale pot pies ... and that Nathan's + Wickles dessert.

Hey y'all.

I had a jones somethin' fierce for some mac n' cheese with some homemade sun dried toms, and baby bella's.

After several hosky's it was time to start cooking when the door bell rang.

Y'all remember my compadre Chico Rodriguez. That Mexican.

He brought me some natural herbal sleep aids.  :shh:

After a half hour coughing contest with Chico on the back porch I got to cookin'.

Butter, garlic, baby bella's and sun dried tomato.

What's this?

Through the magic of time and space it turned into queso!

Had cooked off some large elbow macaroni and added it to the queso.

I was specticular.

Sadly, due to technical difficulties this was the best piccy I got.

Oh and The Cheech?

Best damn non hot hot sauce.

I almost didna' post the mac just because my pics were so lame but as i advertised I was going to do make the mac...

Didna' want to disappoint.

things haven't changed TB...you are still a King when it comes to cooking...

How'd I miss that?? Drunken Cheffery needs a revival!

Looks like you were good and messed up for that one! I'd still eat that by the bowl full until I lost my beer buzz....

And then move on to HHWHISKEY!!

Funny I always thought you were all pirate n' sheeit with the rum.

They even sell HHWHISKEY in SoFlo?

Hey y'all.

Beer + all natchel' medificationz + Fritos + Wolf Brand Chili = Frito Pie!

Thats right y'all, I was rootin' around in the pantry last night and found a can of Wolf Brand Chile.

The NFB kind.

And I had some Fritos.

Added some shredded cheddar scheeze, diced onion, xalapa 'rangs, black olives and xalapa crema.

Frito Pie Bitches!

Anybody says they don't like it is a lion mother sexer person.

yeah.

that sheeit happened.

I had a pretty intense weekend.

Friday night i was the cook and also i bought the meat at a new butcher (afaik homegrown beasts... For sure that meat was great!).
I've no pics of alcohol but trust me there were loads of beer, vodka and other stuff. I remember no wine and that was bad.

Just some awful photos (with my phone it's a painful experience to focus...) but there was much more of that stuff:

That fireplace was a gateway to hell... By far the day i've sweated more of that year.

What about the heat? I brought the remnanats of a sauce i made (33% doughlah, moruga, chcoco bhut, white fatalli, some annum, 33% onions, 33% garlic. It's strong!). A friend of mine cured some steaks but went lost. So some guy come to me sayng that they eat something too hot. And many pieces were contaminated by contact... Meat was great.

Another birthday in a nice place. Here i have some evidence.
I arrived at 5pm at that was the start:

After some beers, mjiots, caipiroska, plain room, vodka, another cocktail i decided to buy a bell pepper and 2 eggplants (store was in front of the house).

Also someone else bought some prickly pears:

Later also roasted corn:

That was the sauce. They said that it was hot... Nice bbq flavour.

Surely best food of the night. They said porchetta. It seems too little, but was indeed good and well cooked.

There was also pasta, sandwiches and other stuff.

Still no wine, but i can't complain.

That's some serious good eating there!

It's been years and years since I've had prickly pear. My parents had cactus gardens in both the front and back of the house, and prickly pear was abundant. I can't even say if it was ever available in stores back then. I know I've never seen it in stores where I live, and I guarantee the plants won't live outside here. Still love it, though, and that shot is perfect!

Thanks g! I don't remember my last time before this with priclky pears... Not bad eaten with drinks.

Since my weekends can at times revolve around drinking and cooking,I thought I would share in the thread. The more ya drink the longer it takes to put dinner on.(hate to ruin a good buzz. ;) )
Side dish is baby spinach, garlic, bacon, onion, asparagus, choco bhut, red whine vinegar salt and black peppercorns sautede.

New York strip steak split in half and wrapped in bacon(because I cook everything with bacon.)

Also chili and cheese fries to go with the other side,

Cooking is just so much more fun when you're drinking! Cooking without booze is like driving a car without a steering wheel. Bacon wrapped steak, that is full of win. That melted sheeze on the side there looks pretty darn porn quality too.

Grilled up some sliced Pork Belly last night. Rubbed in my homemade dry rub and some leftover homemade Jack Daniels BBQ sauce. Unfortunately I lost the recipe as it was on my phone, which broke when it fell on the concrete. That'll teach me for not backing up critical data :(

Funny you never over hear 2 pigs talkin' about another pig huh.

"Geez, Bill has really let himself go...."
