These where my carnitas from last week. We eat them a lot around here. I usually smoke a large pork cut and make enough for several meals, vacuum seal and freeze for quick easy meal preps. When it's time for dinner I just defrost a bag of meat, fry up some bacon, use the bacon grease to saute my carnitas and onions/peppers till crispy and top with the bacon. No avocados in that pic but I love them with a lil sea salt and lime juice sprinkled on them.
