I am a little torn, because I have a fantastic tomato plant called Jetstar that is producing amazing tomatoes and it would be nice to use them, but I know the appeal of the San Marzano to people, so I have a decision to make, homegrown vs. name.  We'll see.
Believe me, I am coming strong on this one.  I have spent years here learning how to make pizza!

I'd use whatever you think is best, explain it, and then not give a fuck about #crowning =)

For me the Napolitana is all in the look gonna look how your crust fared, your cheese and sauce mingled, Jay usually uses too much sauce and cheese so hint hint.

I don't usually worry about crowns, I get in on TD's that interest me and one's I have time for, but this one has always been special, and I am going to come out swinging for PIC1 now that I have somewhat leveled the playing field.  He has much more experience on the Egg, but at least now I have the same equipment.

I remember those wings well,. and I want to tell you that they were amazing.  Nothing like home smoked jerk wings.  Wow were they good!

Good idea!  Get him to come take pics of my pizza for me!  While he is at it, I am going to get him to grill me some beef ribs.  He rocks them better than anyone.  Maybe some burgers too!

No. We cook at different temps...this is oven pie flour.

I mean NO disrespect to PIC1 as he has totally set the bar for pizza here, but what kind of chef (I mean that loosely) would I be if I bowed down and didn't have confidence in myself?  I have worked very hard on my pizza game over the years and I think it is strong.  We'll see if it is strong enough.
