Last night's Dinner;
 
 

Hatch Chilies (thanks again Howardsnm1) Roasted and peeled
 

Diced Ham
 

Garlic cloves 
 

1 large Shallot
 

a few Aji Pineapple
 

11 oz can of white sweet corn
 
2 cups of chicken broth
 
juice of 1 Lime
 
1 cup of cream
 
I forgot to buy Cilantro :doh:
 
Sweat garlic and shallots in 1 tbs butter, add 1/2 can of corn and cook for a couple minutes, add roasted peeled Hatch chilies, and continue cooking for a couple minutes.
Put the 1/2 cooked garlic, shallots, 1/2 can of corn, and Hatch chilies in blender with the juice of 1 lime and puree it.
Return to stockpot and add Chicken broth, Cream, remaining 1/2 can of corn, diced Ham, and seasoning to taste (I used some of my Insanity salt seasoning)
Simmer until soup has reached desired consistency
 

Cream of Hatch chiles Soup, served with grilled Ham and Cheese, and crackers
