food What was the last spicy meal you cooked?

Ouch, SL. Yeah, food poisoning will definitely put the kabosh on a particular item for a loooooong time. I had a similar experience, so can relate. Same thing goes for dish detergent poured into one's cereal..... but that's another story!

Chipotle BLTs

I started with these simple ingredients to make a chipotle aioli:

Just look at how purdy it spreads:

Awesome!!!

Hope that bread's toasted though.

I love meat loaf but mrs. blues is very fussy about it so I rarely make it any more. Last time I made it she said she liked it but only ate one very small slice and no more after that.

The only thing she really likes that I make for her is chicken fett, king crab, or braised pork chops.

As good a cook as some think of me here on THP, I am a total FAIL when it comes to food and mrs. blues.

Excellent, Robbie!

You're in good company, TB, but it sounds like she's actually nicer about it than, say, my son. If I pump up the heat, I get "that is the worse thing you've ever made!" ahhahaha! I look at it as "more for me!"

Good Idea on that, Boss. Hubby likes bell peps, hot peps and shrooms, so maybe a jacked up mealtloaf would be the way to go.

geeme....dish detergent in the cereal? I did see a cook once dump dish soap into about 20 gallons of gravy instead of the dirty steam kettle right next to it........... it was a scramble to get gravy made for dinner that night, but she made it.

TB- hubby does quite a few things very well, and a few of those things are culinary ;)

The bread was indeed toasted, at least on the outside. I used the broiler.

I've actually never made a meatloaf. Hopefully someone will start a Meatloaf
thread or tell me to quit drinking so much and do a search... Or maybe I
should just copy geeme's as those look quite delectable.

Robbie, Quit Drinking So Much And Do A Search.

See? the folks on THP are so helpful, aren't we?....You can ask anything and someone will help you.

:allingoodfunrobbie!:

In all seriousness, the folks on this forum are indeed quite helpful. I was telling
the wife how the people who post here may not fall in the same categories of
race, gender, ethnicity, religion, music preferences etc etc but all have simple
appreciation of good spicy food. I've yet to encounter the trolling or asinine
assholes that populate most other message boards. Admittedly, it is quite
daunting to discover just how many pages upon pages are contained on this
board and I forgot the point I was trying to make. My beer is nearly empty and
I findmyself yearning for another shot of yummy yummy Jagermeister and I
shold preview thsi post but I'm in a hurry you'll understand.

Gotta admit, while unusual, it's somehow not particularly appealing. More a curiosity for me.

But since we're talking about meatloaf again...... meatloaf redux. (Don't laugh too hard.) I'm home from visiting with my daughter and her BF for the weekend, and decided since I had most of the ingredients on hand and my son didn't go with me, I'd make it all over again. Here's tonight's version:

And just a small bite:

What I did differently tonight: Used AJ's fatalii puree and ancho chile powder instead of rehydrating dried pods. Also, added a splooge of miso hoisin sauce and substituted soy sauce for the salt. I used a meat thermometer rather than a flat time, and took it out of the oven at 150F, then tented it and let it rise to 160F before slicing. (Baked at 350F.) So good! So good!

Ok - I'll stop boring you with meatloaf now!

Not at all! I now find myself thinking often of meatloaf as I've never constructed
one. Look how lovely the greasy juice looks in the first picture!

I am kind of laughing at that. After removing the meatloaf from the pan, there wasn't as much juice in the bottom of the pan as there seems to be in that pic - really just a thin layer was left. Most of the moisture remained in the loaf - double-yum!

I would eat the hell out of that. It's MEAT. CAKE. for gawds sake!

I would want a side of yours tho G. And pour your flowy juices on the meatcake. :D

That looks good geeme! Some juices ended up in the pan but you used liquids in your loaf so it's just excess. Looks moist and delish!

cooking traditional texas chili right now. Its unfortunate that this dish is quickly becoming a relic of the past : /
