Last few teasers before I'm done, gotta hussle or burn things

final posts in a bit after I sickman and chairman mao these

omg mah belly, brisket and pancetta one was by far the best tasting patty. Both was good. That aoli was the bomb... friend avocado was yum and the candied bacon was perfect. Ugh...

Big arse burger buns- I used the recipe listed HERE but instead of sesame seeds I used coarse seasalt. Click link for mixing and baking instructions. 
 
1 package active dry yeast            3 tablespoons butter, melted
4 cups king arthur bread flour       3 tablespoons white sugar
1 cup warm water                            1 1/4 teaspoons of salt
1 large egg                                       1 teaspoon olive oil
1 egg beaten hard n fast                1 tablespoon of milk
coarse ground seasalt as needed
 

 
D3monic's patented cherry bomb aoli
 
3 heaping spoon fulls of mayonnaise   2 tablespoons of sriracha mayo
1 cherry bomb pepper diced                   Lemon juice to taste
Pepper powder to taste (in this case JHP smoked chocolate Caribbean blend) 
Mix ingredients together, chill and serve
 
Toppings- listed from bottom to top
 
Smoked ham
Smoked and candied bacon- Rub bacon down with brown sugar sprinkle with pepper powder of choice (JHP SCCB)
Ground brisket and chuck burger
Provolone cheese
fried avocado-
2 eggs                                      2 cups of flour
1 avocado sliced                     1 cup of panko crumbs
big pinch of black pepper      lots of ground cayenne pepper
heat frying oil to 375
place eggs into bowl, whisk , combine flour and peppers in a separate bowl.
gently toss avocado in flour, dredge through egg and then roll in panko crubs and drop into fryer. Done when golden brown

Smoked Gruyere cheese
Grilled portabella mushroom
Jalapeno popper- Jalapeno stuffed with smoked gruyere wrapped in bacon and smoked
Onion straws- soak in buttermilk for an hour, dredge through cayenne and black pepper seasoned flour and fry in 375 degree fryer till golden brown

second one was my favorite too, that pancetta really brought the taste up a few notches. Big daddys bbq sauce is pretty legit too. The wife and I each had half of the burgers and we are so stuffed. Pics don't do them justice on how big they was. I'm not good at the burger stack but I could barely grip the first one it was so tall. Second smashed down a little easier and was more manageable

The Rolls:
1 cup warm water

1 tbl. Yeast
2 tbl. Molasses
1 tsp salt
3.5 cups flour
 
Mix water, yeast and molasses and let it proof. Add that to the flour and knead. Let sit till it doubles in size. Cut the dough into 6 pieces and form into buns. Drop in a roasting pan filled with boiling water in which there is 3 tbls. of baking soda for 4 or 5 seconds. Take out and put on nonstick baking pan. Sprinkle with salt and seseme seeds and put in preheated oven 350f for half an hour.
 

 
Meat:
2/3 beef
1/3 pork sausage
Salt, pepper, garlic powder, onion powder, fennel seeds
1 egg

Mix all together and form into patties. Put on grill cook as desired. I like medium with pork involved.

Roasted slam chili
Sautee’d radiccio
 
Creole Catsup:
Onion, Chilie d’abor, vinegar, water, sugar, salt
