Just be sure to marinade the pinaples in Teriaki sauce, LDHS thinks there's something to that. :D
 
One Bulgur Paddy
1 Ripe Avocado
1 Cup Bulgur Wheat 1 Cup Reserved
1 Cup Lentil Flour
1 Cup Garbanzo Bean Flour
1 Can Pickled Beets for the juice only
1 Pack of Tofu
1 Tbs of Fennel Seed
1 Tbs. of Coriander Seed
2 Tbs. of Smoke Ground Pepper
1 Cup Water Reserved
Lemon Juice if desired
Salt or Pepper to taste

Directions
Note I recommend utilizing a Cuisinart
Add the Tofu Tub the softer the better !
Add Avocado
Pulse and slowly add water and bean flour
Add Fennel seed,Coriander Seed and Smoked Pepper Powder
Add BULGUR !
ADD Beet Juice it for the color !
We are looking for a Play Doh consistency if mix is to wet adjust the BULGAR
to dry more beet juice... ETC.
remove mixture and form the Paddys plate and allow to rest refrigerated at least an hour.
Over night proved to be ideal.
I chose to bake mine at 350f. I turned then over at the 12 minute mark and put in for 10 more.
I used a toothpick to test dryness. Waited 2 more minutes.
Yields approximately 4 Bulgar Paddys.
I would make these again sans beet juice and fry as an Appetizer.

Grassy - that's one BIG patty there! If I squint, it even looks like actual meat!!!! hahaha Bonus points for avo and beet juice!!!! :)

i came inside from mowing and walked into one of the biggest kitchen messes of all time. maybe i wont even try to make a vegie burger if this how much claening ill have.
 
Some nice "meaty" looking patties so far, wow!

The All Day Affair

Ingredients

For the Patties
4 cups cooked beans (I used the beans from a 16 bean soup pack minus the flavor packet)
1 cup cooked Quinoa
1/3 cup Quick Oats
1 Tbsp of butter
1 small Vadalia Onion
2 garlic cloves
2 large Okra
2 radishes including greens
2 baby beets including greens
2 small carrots
1 cup Spinach
4 Thai peppers
2 eggs
Sprigs of Thai Basil
Tarragon
Thyme
Dash of Badia Complete Seasoning

Toppings
1 ripe tomato
Buttercruch Lettuce
Olive Oil Mayo mixed with a dash of Jalapeno powder and Hatch powder

For the Bread
1/3 cup milk
1 egg
Box of Jiffy Cornbread mix
Purple and green Jalapenos
1/2 cup Grated Cheddar cheese

Wash and soak beans overnight.

Prepare Cornbread according to directions for 8x8 pan. Add Diced jalapenos to the batter before baking . Once baked, top with Cheddar cheese and bake an additional 5 minutes.
Set bread aside to cool completely.

Simmer Beans until they are cooked but maintain a firm appearance.
Cook Quinoa per carton directions
Grate carrots very fine. Grate radish. Chop the onion, garlic, Thai peppers, and beets and beet stems very, very fine. Reserve the beet and radish leaves.
Simmer the Okra until soft.

Saute the onion, garlic, peppers, beets and stems in butter until soft (about 4 minutes)
add the carrot, radish leaves, beet leaves, spinach, tarrogon, thyme, and thai basil. Cook until leaves are wilted.

In a blender, puree the okra, add the saute mix, 2 eggs, oats, and 2/3 cup Quinoa. Mix well.
In a bowl, hand mash the beans. Add mix from blender and 1/3 cup Quinoa. Mix well and form patties (Makes about 5). Add a dash of Badia Seasoning
Bake 40 minutes at 350 on a cookie sheet lined with parchment paper. Turn burgers at 20 minutes.

Quarter Cornbread and slice pieces in half. Add spicy mayo, lettuce, and patty. Kept it simple this time, but would definitely add avocado next time

Patties turned out just right. Moist yet firm.
