When I was younger I got a egg mcmuffin do it yourself kit for the microwave. I don't eat mcdonalds but man those were good for cooking inless then 30 seconds

I took 37 prep photos....but I doubt anyone, including the site, wants to be bogged down with that.....so here are the highlights.....minus the final plating. (I wanted it to sit overnight and get HAPPY! Final plating and pics a bit later!)

I made kind of a half cornbread/half polenta "cake" to go with this. I'm not sure why....but it just SMELLED like it would pair well together. They're dense....and have a HEAVY sweet/spicy corn flavor...

Man I love curry/indian food. That looks great ^^^   they make a dish here that is so awesome I may have to get some take out tonight in the blizzard. 
from their menu- Murg Kasari tender pieces of chicken marinated in a yogurt base, charbroiled and finished in a coconut curry with saffron.  wish I could recreate it at home

By the way even though a lot of Indian restaurants don't have pork, it is traditional with vindaloo. Since Goa was a Portuguese colony, they ate a lot of pork and pork vindaloo was a traditional dish. Is that why you did it? You can't get it at most Indian restaurants. Good stuff man!

Yeah.....I've always heard that pork was historically correct. Besides.....it tastes good and takes on the flavor of the marinade really well!
 
Sweet! Man, this used to be my jam! Ate is all the time. But only lamb and chicken. And chicken... meh. I want that pork!
