I put ever dang 'thang on a flour or corn tortilla.

How about a sun dried tomato, goat cheese, roasted garlic, pequin, and refried bean taco?

Home made or store bought.
 
If you post a pita taco I will like you but then unlike you.
 
And then probably still like you again if it looks really good.
 
Get crazy.
 
 
Lime cilantro chicken thighs with pequin powder.
 
I love pequins.
 
Flat topped.
 
Like a naval aircraft carrier.
 

 
And even more lime and cilantro.
 
In pintos and rice.
 

 
Roll it all up with some cheese and rock it!

I like blitzing the dry lentils to make powder and add that way, chickpeas too.

Roast them slightly first in the oven then grind....DELICIOUS!!!! Thats how you make the base for sambar masala. ATM im addicted to madras lentils and beans. Its like a meatless chili but very satisfying.

Toppings can be fillers sure but also they can add texture. All-meat is soft. Throw some pico, or some slaw/radish just for crunch, hit it with hot sauce, boom!

Some slaw or radish would be good. I would have put something on it but didn't have anything. I had some lettuce but, eh.. There are some onions in it from when it was cooking though.

IMO you chose wisely. I usually dont like shredded lettuce on any taco except good old fashioned ground beef tacos. Even then Ill usually skip it. Oh yeah, and taco salad.

Leftover carne guisada tacos for supper tonight. I froze the leftovers from the last batch I made recently and yesterday decided that I wanted them again. Modded refried beans, diced jalapeño and onion with lime juice, queso fresco cheese and bacon went on the little street taco size tillas. The HBD sauce was on the tacos and the Cholula was on the freshly fried chips.

I think the drum is made for this type cooking. I'll smoke it uncovered for 2 hours before the wrap. 
 
I need to find leaves. I can chop fresh plantain leaves from the neighbors plants.

Ive been watching Mark for awhile. He makes some great vids. And I have to give him credit for trying some foods that a lot of people would shy away from.
