good idea w/ the thermal mass addition, too ... i have a box of firebricks in my carport, just haven't had the right cook come up to use them yet ...
 
5x fists makes a lot more sense ... still a nice amount of wood, but turkey warrants it ...

I have enjoyed cherry for turkey's too ...
 
I like Apple or Pecan for chicken ...
 
Oak (with or without Pecan, and or a little Mesquite) for beef ...
 
Pork is pretty convertible, I've enjoyed Apple, Oak/Hickory, Pecan ....

I was kidding about tacos...doing filets that I broke down from a whole loin today and lobster tails on the grill. The turkey was amazing and almost made me cut off the grill! Might have to a a sammie tomorrow with it ;)
