I am about to attempt some authentic-ish Indian food. No decent beer or wine in the house. Spirits will lubricate the process.
 
Chicken Tandoori

Recipe was for chicken legs but all I had was thighs. Had to marinate it twice.

After first time.

Recipe said 6 small thai chillies, but all I had was 4 Bih Jolokias. Some of them were a little green so they were probably not as hot as they could've been.

Tumeric rice, cucumber raita and mojito. Used coriander instead of mint in the raita, tastes much better.

Was seriously hot. Probably didn't use enough paprika cos it wasn't fluorescent red.

That indian chicken looks so freaking good! Makes me want to expand my horizons and do up something besides tex-mex/mexican food always all the time. But theres always time for trying new things later... For now, same ol drunken thang for me.

I have pounds of left over chili to destroy. So sittin around on Sunday and drinkin all day I looked to my fridge for inspiration, and this is all I could find. I could bitch about always only ever having whole wheat everything, but untill I start buying my own I just have to deal. So I'll make do.

Whole wheat tortilla, cheese, chili and more cheese before it gets rolled up and thrown on a hot skillet.


And after a few minutes on the skillet... delicious melted chili cheese burittos. What a fatty fat, self indulgent, drunken meal that was... I'm still full.

I got to go make some chiltepin/jalapeno tartar for some steelhead.

Pickled peno's, pickled chiltepins, Best Made Dill pickle chips, onion, garlic, fresh cracked black pepper, kosher salt, and olive oil mayo.

Ran the pheesh through the zipper unit and then added garlic, onion, rolled oats, an egg, kosher salt and black pepper and a couple splashes of the pickled chiltepin brine.

mmmm...steelhead cakes...looks good to me! The oatmeal instead of crumbs is an interesting twist. I might have to try that sometime. I like the tartar too!
