I don't have to read the whole thing but yeah beans have been in chili a long time. Like I've said before, these high level contests want to taste the meat (and the gravy as they say) without interference. They look at color, and they taste how well the gravy and meat mix, and they don't want any interference. That does not mean beans in there does not make it chili. But a bean is a bean, you bite it and it tastes like a bean. So they don't want it for judging the basics of the chili. Then chili snobs everywhere claim that is "real chili." LOL. It's all about preference. Do you like beans? Fine. Do you not like beans? Fine. Are you entering ICS or CASI? That's different! Simple stuff really.
 
And Texas-style is just that... Texas-style chili. It's not the only style. Many styles. Even some recipes of Texas-style have beans.
 
There's all kinds of chili, and if you want to use ground beef, fine. If you want chili grind, fine. If you want pork cubes or pulled pork, fine. Just make chili! It's a good meal that brings people together, only the talk divides people.
 
I have two ideas now. I'm hoping not to gain any further ideas, to keep the decision simple ... binary simple.
If I was competitive, I'd be testing cornbread recipes each night starting now ... but I'm not.

Chili was born of a need to make food last on the cattle trails and such. So it would seem to me that real chili would include beans and other fillers because this seems like their purpose,
 
It's origins probably lie in Caribbean immigrant women who brought a spicy meat stew to San Antonio. Which was then transformed by San Antonio women into something resembling what it is today.
 
I was surprised to learn that chili does not exist in Mexico.

Beans or no beans has been contested almost since its birth.
 
What I read is that there is nothing resembling American chili in Mexico and that there never has been. There was even a review from a Mexican chef about 1959 in which he called it detestable stew or something.
 
I wouldn't know if they eat Texas-style chili there, but chile verde is good stuff. They don't recognize a lot of the food we've bastardized. Hard shell tacos lol.

After the criticism and shit I got from the last throwdown I don't reckon I'll be participating further.
