Here's the beginnings of the Orange Beef. It starts with a roast. After an hour I lowered the temp to 325F and letting it go for another 90 minutes. Here's where we are so far.

See.....I don't mind the carrots. It's the potatoes I omit from my pot roasts....I never have cared for the texture of stewed taters.....even in chowders.
 
I had to have potatoes in there or Mrs JayT would have a fit. Here's what it looks like. Oh, btw, I decided it needed some more heat so I added a halved fatalii and 7-pot to the mix for a while. Definitely kicked it up a bit. I didn't have Jasmine rice so I had to make do with yellow rice with cilantro.

Spicy rice with bacon. I used chili powder and red pepper flakes, and near the end of cooking I added some grape tomatoes. I then topped that with the bacon and bacon fat. Some one brought home Taco Bell and I took the packets of sauce. Two each of hot and fire.

This probably would have been better a couple of days before with the pork chops I made and the pan juices instead of bacon fat. Or perhaps no meat but smoked cheddar or pepperjack and some pepperocini.
